Turban squash, also known as Red Turban squash, is a winter squash with a hard, multicolored skin and a sweet, nutty flavor. It is medium to large in size, irregularly shaped, and can grow up to 15 inches in diameter and around 5 to 6 pounds. The shell features patches of green, orange, yellow, and white, while the flesh is a pale orange-yellowish color. It is a variety of Cucurbita maxima and can be used in a variety of sweet and savory dishes, such as soups, stews, casseroles, and curries. Due to its bright, mottled coloring and unusual shape, it is often used as a decorative squash. When stored whole and uncut in a cool, dry place, it can keep for a couple of weeks. It is also known as French Turban and Turk’s Cap and is an old variety from France.
