The Squash Futsu Black, also known as Black Futsu, is a small to medium-sized heirloom squash variety that has been cultivated in Japan for hundreds of years. It is a highly prized and unusual squash with a distinctive appearance. The fruit starts out as a deep, dark green (almost black) with heavy ribbing, bumps, and warts. As it matures, the skin slowly turns dull with hints of yellow and eventually settles into a warm orange buff color. The relatively thin skin remains edible, and once cut open, it reveals bright orange flesh with a flavor reminiscent of a cross between a pumpkin and a chestnut – sweet, buttery, and slightly nutty. This squash is known for its deep, nutty flavor that develops in storage, making it a versatile ingredient for various culinary uses such as roasting, frying, pureeing, or pickling. The fruits typically weigh around 1.5kg (3 lbs) and can be harvested and kept in a cool, dark place for around six months. The Black Futsu squash is a chameleon in the garden, offering a unique and flavorful addition to any culinary repertoire.
