Common fennel, also known as Foeniculum vulgare, is a biennial to perennial shrub with thick branched stems that can reach between 120-200 cm tall. The stems are thick with scale-like features and the green leaves, known as the fennel fronds, are feathered, green to blue-green in colour and look like dill. The plant flowers between July and September, producing lots of small yellow flowers that attract hoverflies and bees. The initially blue-green seeds that develop after pollination are long and grooved. They ripen late in the year between September and November when they turn brown and fall off. Common fennel is widely used in cooking, with its leaves and seeds having an aniseed flavor that can be used in meats, fish, salads, and more. It is also a low-maintenance plant that requires free-draining soil and full sun.
